fix(api): align enseignements route with Fresh file routing

- Replace flat file `[idProf]_[idModule]_[idPromo].ts`
  with nested structure `[idProf]/[idModule]/[idPromo].ts`
- Ensures URL matches `/enseignements/{idProf}/{idModule}/{idPromo}`
